Not as well known, perhaps, but GMO-free Idared apples, grown right here on our farm in Lancaster County, of course, will surely be well regarded after you try them! This offspring of Jonathan and Wagener was developed in Idaho and (we at Kauffman's agree with Wikipedia, above) is especially well suited for applesauce (just ask Jeanne Dickel, below!), baking (it holds its shape very well), cooking (don't miss trying this dish), and drying uses (there's a good chance that those Tart Schnitz you buy at Kauffman's are dried Idared apples!)

Extra, EXTRA: Jeanne Dickel, then a cashier in our market, entered a Kauffman's Fruit Farm grown Idared and Rome Beauty blend into the applesauce competion at the local West Lampeter Community Fair a few years ago. The result: Jeanne brought a second place ribbon home with her!

Speaking of applesauce, are you aware that this vintage American staple can be used in more ways than merely as a tasty side dish at lunch or dinnertime? Here are a few creative ideas to get the cooks at your house started! Then there is the Allrecipe website which chimes in with this timely tidbit, "Ida Reds have a tangy flavor and a flesh that is sometimes tinted a rosy pink. It makes beautiful applesauce: cook the apples with the skins on and strain the sauce to get the best pink color."

In case you're wondering: Yes, Idared can be eaten fresh with good effect! Just ask Adam of the Adam's Apples blog: "Her creamy-white flesh is on the fine side of coarse-grained, crisp though a little tender, and juicy. The balance is pleasantly tart, with sugar lurking underneath. Vinous and spicy flavors, and an astringent finish, combine to make Ida Red bracing and refreshing. There is also a hint of melon." (Emphasis his)
