This modified cornstarch product is well known (and appreciated) by many bakers (commercial and otherwise!) as an essential ingredient in fruit pie fillings. Clear Jel works well with acidic ingredients and tolerates high temperatures. And, have we mentioned; it's always a good choice if you're canning homemade pie fillings, since it doesn't begin thickening until the liquid begins to cool.

Clearjel (Cook Type)
Use as a thickener. Use 1/4 cup clearjel to
1 quart of liquid. Bring liquid to a boil
before adding clearjel. Do not over boil!

Clear Jel

I tried clear Jel for canning apple, cherry and peach pie fillings this year and the results were wonderful! The pie remained evenly thickened in consistency and did not change in appearance ever over 6 months up to a year on the shelf. This is the way to make wonderful homemade pie filling at an affordable price...and your friends will love it also!
