Salted Caramel Apple Pie Biscuit Bites

 It's that time of year again, when the air turns nippy, the leaves become natural fireworks, everyone is rushing to Starbucks for their very first PSL (Pumpkin Spice Lattes) and stores think it's ok to start breaking out hints of Christmas. At Kauffman's we believe in autumn, and Christmas after Thanksgiving, which means we enjoy each season as it comes. 

 To kick off autumn this year we celebrated 100 years of Kauffman's and had a marvelous time, thanks to all of our amazing friends and neighbors. Here are a few fun facts from the day: 
  • We had about 1200 guests each day
  • There were even some tourists from South Africa, Australia and France that attended the event
  • There were approx. 2,000 sausages, 1,000 hot dogs, and 1,000 peach smoothies served, plus around 3,000 small bottles of apple cider. 
  • To complete the celebration, the family at Kauffman's had a reunion for descendants all over North and Central America. 
 A good time was had by all! We do still have our tours open for anyone is interested in taking a walk in the orchard and seeing how things are run, fall colors, etc.

We're pleased this month to offer the Mix & Match Homegrown Fruit gift box as our September feature-of-the-month. This box is chock full of delectables, as pictured below. 

The test kitchen got a box this month and came up with an amazing recipe that we thought we'd share. 

Salted Caramel Apple Pie Biscuit Bites


Serves 8

4 tablespoons butter, unsalted
2 medium apples, peeled and diced
1 teaspoon ground cinnamon
2 tablespoons light brown sugar, packed
1 can Pillsbury Grands Flaky Layers Buttermilk Biscuits, 8 count
1/2 cup half and half
1 egg yolk
2 tablespoons light brown sugar, packed
1/2 teaspoon ground cinnamon
1/2 cup prepared salted caramel sauce (I used Trader Joe’s brand)
1 cup powdered sugar
4 tablespoons heavy cream


1. Preheat oven to 350 degrees F.2. Melt butter in 12 inch cast iron skillet over medium heat. Once melted add apples, cinnamon and brown sugar. Stir to combine and let cook for 5 minutes. Cut each biscuit round into 8 pieces (I keep cutting in half until I get 8 triangles).

Place biscuit pieces into pan and gently stir into apple mixture. place half and half, egg yolk, brown sugar and cinnamon into a medium measuring cup, whisking to combine. Drizzle over biscuit mixture. Use a spoon to press biscuits into cream mixture evenly.

3. Bake for 30 minutes, until set. Remove and drizzle with salted caramel sauce.

4. Place powdered sugar into a small mixing bowl and whisk with cream until creamy and drizzling consistency. Drizzle over top of caramel layer. Serve warm.

Makes 8 Servings
